My awesome wife found this recipe on Damn Delicious. There is a tzatziki recipe as well but we usually just buy it from the store. The quesadillas are super easy and you could probably add some grilled chicken to round it out.

Ingredients:
- 10 (8 inch) tortillas
- We used whole grain and it tasted great!
- Fresh spinach, washed and rinsed
- A 6oz bag should be enough for 5 quesadillas
- Sun dried tomatoes, drained
- A small jar
- Kalamata olives, pitted and chopped
- Im sure whatever olives you have on hand would be good if you dont have kalamata
- Shredded Mozzarella cheese
- Crumbled feta cheese
- Grilled chicken?
Directions:
- Make tzatziki if youre that kind of person
- Preheat the oven to 400° and line baking sheets with parchment paper
- Put ingredients on tortillas
- Everyone can make them how they want
- Youre going to need more spinach than you think, trust me
- Cover with tortillas
- Put the quesadillas on the baking sheets and bake until the cheese melts. Should be about 10 minutes
- Slice them up like a pizza and serve with tzatziki!
