Souvlaki

Every year, in the spring, they shut down a few streets downtown here and hold the Festival of the Arts. They have bands playing, admission to the museums is free, there are craft areas, and, most importantly, there are food booths everywhere. My favorite booth is the one hosted by one of the Greek Orthodox churches in town. And the best thing that they offer is the souvlaki. A few years ago they shared the recipe they use on the Facebook and Im sharing it with you.

Ingredients:

  • 1 pound cubed pork (pork butt preferred)
  • 1 teaspoon salt
  • 1/4 teaspoon granulated garlic
  • 1/8 teaspoon pepper
  • 1/2 teaspoon oregano
  • lemon juice

  1. Combine all ingredients and marinate pork overnight
  2. Place meat on skewers and grill over charcoal
